Spotlight On: Pimiento Cheese
When it comes to cheese spreads, the French have Fromage Fort, the Italians have Mascarpone, and the Germans have Obatzda.
But Pimiento Cheese is America's spread. Many have their own secret recipe and guard it fiercely. Certain ingredients garner extreme loyalty. Some use cream cheese (we don't). Some swear by Hellman's mayo; others only use Duke's (ours is a secret). Some even add nuts (wha???).
Our signature Pimiento Cheese is made from a combination of three cheeses (including hand-made Dragon's Breath from Pennsylvania), mayonnaise, pimiento peppers, onions, and various spices.
The result? A tangy, savory, multi-layered (dare I say "complex") Pimento Cheese with the perfect amount of heat. We melt it on a Grilled Cheese, mix it in a Mac, drizzle it on Nachos, and eat piles of it on platters. Over the past ten years, we have served thousands of pounds of Pimiento Cheese to our guests—and have never changed the recipe once. Why mess with pimiento perfection?
